Here’s the perfectly indulgent recipe to set you up for easter weekend… these brownies are chocolate heaven with the perfect amount of fudge-y, gooey-ness. We definitely recommend giving this recipe a go! We ate all of them within 2 days… no regrets! Treat yo’self.
Ingredients:
For the brownie:
- 60g chia seeds (mixed with 180ml water, stand for 5 minutes to make a chia egg)
- 5 tbsp Nuoi Foods Hazelnut Cocoa butter
- 95g coconut oil (melted)
- 140g coconut sugar
- 500ml oat milk
- 60g coconut flour
- 50g ground almonds
- 70g cacao powder
- 180g dark chocolate chips
For the cookie dough:
- 70g coconut oil (softened but not melted)
- 100g coconut sugar
- 2 tsp natural vanilla extract
- 2 tbsp oat milk
- 125g coconut flour
- 120g gluten free plain flour
- 100g dark chocolate chips
Method:
- Pre heat the oven to 180 degrees fan
- Line a deep baking tin with greaseproof paper or coconut oil
- For the brownie mixture, whisk together the Hazelnut Cocoa butter, coconut oil and coconut sugar until combined
- Then add the chia egg and oat milk and whisk again
- Stir in the coconut flour, ground almonds and cacao powder until you have a smooth brownie batter
- Then add your chocolate chips and set aside to make the cookie dough
- For the cookie dough, mix together the coconut oil, coconut sugar, vanilla and oat milk in a bowl until combined
- Then add the coconut flour, gluten free plain flour, chocolate chips and stir until the cookie dough is combined. If it’s too crumbly, you can add a little more oat milk
- Time to assemble the masterpiece…. pour the brownie batter into your baking tin, and roll the cookie dough into small balls
- Place the cookie dough balls into your brownie batter until completely submerged
- Bake the brownies in the oven for about 40-45 minutes, you can check if they’re done by wobbling the dish slightly, if the mixture is still wobbly, they’ll probably need an extra 5-10 minutes
- Remove the brownies from the oven and leave to cool for around 30 minutes before cutting up
